The main OST's that you HAVE to check out:
Pokémon: All gens have at least 2 or 3 tracks that you'll want in your head, but gens 1, 4 and 5 stand out to me. - Gen 1 has that classic, old-school, retro 8-bit music that everyone loves. - Gen 4 has the best, God-damn soundfont you'll ever hear! This makes the Kanto & Johto remixes in HG and SS phenomenally good! - Gen 5's music, particularly in B2 and W2 is just so advanced and the electro soundfont from the original BW games has been perfected. The unique electro-style soundfont and complex track layers are just insane!
Crash Bandicoot: Crash: Warped and Crash: Wrath Of Cortex have some notoriously catchy tunes. WOC took a few tracks from Warped and, combined with it's new tracks in their new soundfont, man it's just awesome! Every track gets you nodding or swaying your head!
Spyro The Dragon: Scored by Stewart Copeland from The Police, the original 3 games have great OST's. Gateway To Glimmer (or Ripto's Rage in the US) and Year Of The Dragon have particularly good tracks. I've memorised nearly every track from YOTD and I can play any track in my head whenever I want to, wherever I am. It's brilliant!

Pretty much everything by Grant Kirkhope is cool
he made the music for Goldeneye, all Banjos, Perfect Dark and others. He does have some stuff that sounds too much alike, though.

I've always loved ODST's Noir/Jazz soundtrack. And Kirby, lots of Kirby music, Butter Building and Orange Ocean, and Air Ride! I agree with Aphoristic's claim of Smash music greatness. Thank you all for guiding me to video game music enlightenment. This again renews my sorrow; video games are art, and there are so many games which I know I would love and enjoy, but will not play, oh how my heart aches, the pain fresh in me once more! To spend ones life admiring the beautiful art of music and story brought forth from them, oh how joyous I would be.

Not sure if it counts but powerglove is awesome. Metal isn't reaaally my thing...but I can't help but feel nostalgic with their songs. They range from video games to old TV shows... including batman, xmen, and.... winnie the pooh (one of their more badass songs).
This is a mix of metal man's theme from megaman and mortal combat's theme... prepare yourself.

For true OSTs... here are some of my favorites... as links instead... because this page takes forever to load as it is... I've played alot of games in my life. Gourmet Race - Kirby - SSBB First Boss Battle - Digimon World 2 Venice Rooftops (or Ezio's family...sang thing) - Assassin's Creed 2 Labored and Lost - Assassins Creed Revelations (used this for my favorite montage I've done) Sanctuary - Kingdom Hearts 2 and my favorite. The single best thing to come from this game. 1000 Words - Final Fantasy x-2
