Unnecessarily hard as doo-doo. I'm stumped, so I'd do anything to get it at this point.

Bloodthirsties are pretty much luck (as well as frustrating).
It can be completely random, sometimes I'll play 5-6 games without getting one, and then sometimes I'll get 2 in one game, with the same lobby/map.

Try it in Sticks & Stones. Might be easier there since all the enemies are limited to the same quirky weapons.

Maybe it's just because I suck but most of my Xbow kills are on people charging at me with their Ballistic Knives that manage to stab me before the stick explodes.

I've done the challenge and found it pretty difficult. I used Sticks and Stones, and I think I ended up getting it on Hijacked, but here's some tips:
1. Remember that the radar is always on, but don't count on it, because sweeps are slow. Rely on your eyes. 2. If you miss more than once, let them kill you, or jump off the map, whatever. My personal choice was to spin in circles in the middle of the map while looking up and swapping weapons. This actually took really long to die sometimes, but it was hilarious. 3. Use cover. Just because Sticks and Stones is a Party game, doesn't mean this doesn't work. Mind bullets bolts are your friend. 4. Sprint away from danger and get your reload in. In this game type, you can run right past people without getting killed, and buy yourself some time to get in a more favorable position. Dodge, duck, dip, dive, and dodge. 5. Remember, it is not a hitscan weapon. You'll have to lead the target a bit. Generally, aiming at about the edge of their body is a good guess. 6. Let people come to you. You're on radar, they'll come. 7. Anticipate spawns. Always a good idea, but especially in Free For All, which this is.

I haven't done this nor do I plan to (until I get bored enough), so my opinion may not matter. However, I think the technique used for farming scorestreaks in Hardpoint might be helpful to you. There are a lot of them that are very enclosed, and you can see on the map when someone is inside. Wait outside, kill them when they cap it, retreat to safe vantage point, repeat. The first, second, and fourth hardpoints on Carrier are brilliant for this, as are the first two on Plaza, the first and fourth on Slums, and many others. The third one on Hiacked has only two ways in; have a buddy watch one side while you preADS the other with your xbow. You even have a handy TI spot down there on the red side in case anything goes wrong.

If you are killed with the crossbow out, you could try going back to your corpse to scavenge the bolts.

Hope for hijacked domination. It is a very easy map for these ridiculous challenges because flanking is quite easy in this map.

Play sticks and stones and remember to stop moving before you shoot.
Hitting 5/6 shots is difficult, but not impossible. I hate the bloodthirsty challenges.

It's very difficult. Scavenger is a must. I played ground war domination and camped by B. Stuck people as they tried to cap the flag.
I found the dual band scope very helpful.

Not trying to ego out, but I didn't find it that difficult. I will detail why...
Sticks and Stones. I already recommended this mode for diamonding the specials. What this lets you do is not only play with the crossbow on an equal playing field, but get used to what areas are good per map for getting xbow/BK killstreaks. You need 300 kills for both...it is hard not to improve your accuracy when going for that initial challenge. Once you get that done it feels like a cakewalk to get bloodthirsty medals with those two. The only problem with the crossbow is the fact you can only miss one shot. However, sticks and stones is by far the easiest method to do that challenge.

Stick and Stones is simplistic on paper, but with even grounds comes a great deal of attrition and luck. More often than not you're easily sniped by another 1HK weapon -- or simply be knifed like as though it were nothing. I've tried being evasive more, but boy do most pricks chase you down through Hell and back. Thus far, the only real benefit I got from S&S is to continue grinding up my Ballistic Knife as soon as my two Crossbow shots went moot.
Objective games like Hardpoint and Domination sounds reliable. Only thing that I'll definitely hope for is the lobbies I join aren't complete blow-outs; either the enemies wont be able to assail our objective, or we become the ones pounded by a Lodestar. I suppose it'll be dandy to study up more of those Hardpoint spots, all the while become more versed with that spawn trapping craze in Ground War. Ghost and Flak Jacket will be needed, of course.
I've also one question in particular; let's say you have your Crossbow along with an SMG -- mostly for a reliable self-defense. You run out of bolts at your intended mark, but use your SMG to Scavenge up some more; does it count for the challenge just to be able to get all five Crossbow kills in one life, or must they be consecutive with only that certain weapon? Sounds too gosh darn golly gee whiz good to be true, otherwise...

I completed this challenge on Sticks & Stones. It would be absolutely impossible or pure random luck to complete it in normal gameplay, even with scavenger.
In Sticks & Stones, everyone else is strafing around trying to line up crossbow & ballistic knife shots as well, so if you get really good at the game type (you should have been playing it to get the 300 crossbow kills), then it's definitely doable there.
Took me about 3 or 4 matches to get it after I exclusively tried for it. You have to hit 5 of your 6 shots without dying. I got to 4 kills about a dozen times. Almost threw my controller through my television.

I've just imaganed how freaking hard is this challnge on PC, where you have no aim assist… But it still can be completed, I suppose. Aiming is actually much easier on pc, which is why there is no aim assist.

Well, kind of.
There's no aim assist because when 3D mouse aiming was implemented (Quake 2? Quake 1 uses Doom controls by default), it was pretty obvious that it wasn't necessary.
Try watching some multiplayer games of early id titles (like Doom or Quake 1) to see pre-mouse examples of aim assist on PC. Gameplay is balls to the wall fast.
