Can someone look these up in the game files or test them? Currently this is what I know and what I would like to know regarding the topic:
-Handguns have the fastest switch to rate, followed by Machine Pistols, Shotguns and then Launchers. -The switch speed affects the switch animation. For example, switching from Sniper Rifle to Handgun, putting away the Sniper Rifle involves bringing it down to the left, whereas when switching to larger weapons such as Shotguns, the Sniper Rifle appears to be brought up above then behind the player. -Primary weapons affect switch-from speed. Sniper Rifles appear to be the longest, SMGs the shortest, although the secondary weapon still appears to have a bigger impact on switch speed than the primary. -The Rafficca has a switch speed as fast as Handguns.
What I don't know: -Do different weapons of the same category have different switch rates? I know the Rafficca has a faster switch rate and different animation from the rest of the Machine Pistols, but it is pretty much classified as a pistol anyway, seeing it can be used in Last Stand. I also heard that the Colt .44 has the fastest switch rate out of all weapons. -Does akimbo affect switch speed? It doesn't appear so, but I feel ever so slower switching to Akimbo Colt .44 than a single one.
It would be appreciated if someone made a list for switch rate values, as I beleive it to be just as important a factor in a game as ADS speed and Reload Speed.
You are my bro, bro.

The weapons all have a delay when switching from them and a different delay when switching to them. So any switch = weapon A switch from delay + weapon B switch to delay. I do not know if individual weapons have different values or if whole classes usually have the same. I believe all the pistols are the same, and are all the fastest. The akimbo mag is generally considered the best quick draw weapon for it's 0TTK performance, though Deagles can also do about as well at close range. The Mag is generally considered better in ADS due to the recoil of the Deagle, though I'm not sure how the recoil affects them in hipfire akimbo mode.
Note, the throwing knife seems to be even faster than switching to a pistol and being equipment will actually cancel some animations.

Each weapon has an individual drop and raise time. There is also a quick drop/raise time for throwing frags and specials and such. There is also a knife recovery time for each weapon and usually all the weapons in one class are the same for this.

Not times, but a tip. Any weapon that has a long switch animation can be skipped. Once you hear the weapon switch sound, double tap weapon switch.

"weapon switch", is that a console thing or does tapping the "1" (or "2") key on the PC achieve the same results? [sorry for being lazy]
