According to Den's information, there are only two differences.
P90 has a larger clip. Uzi has a higher RoF (therefore, quicker TTK).
They both do equal damage at what it thought as the same ranges.

Another, maybe the most important difference is that the Uzi has a straight upwards kick while the P90 has a stronger sideways kick.
For medium-long distance encounters, the Uzi will benefit a player with quick acquisition reflexes, who can point at center of mass and let the viewKick climb up to a potential headshot. The P90 on the other hand will either require a disciplined trigger finger or a bit more luck when spraying the enemy. Works good for evasive enemies.

I messed around with the UZI some weeks back out of boredom on some FFA maps and had more success with it than any other SMG, sadly the akimbo I worked up to turned out to be rather useless. Like Den says, aim at center of mass and let the gun work up to the headshot on it's own. I'd put it in the ranks of "guns that are just fun to see reload with Sleight of Hand" too.
